In which I try my hand at a Austrian cake recipe...
So following a straw poll of Network as to a difficult cake to finish off my term of CAOS cakes I settled on Sachertorte. A traditional Austrian cake recipe invented in 1832 by Franz Sacher.
Ingredients
- 350 g dark chocolate (50--55% cocoa)
- 110 g unsalted butter
- 110 g golden caster sugar
- 5 egg whites
- 4 egg yolks
- ¼ tsp vanilla extract
- 110 g plain flour
- ½ baking powder
- 150 ml double cream
- 2 tsps glycerine/liquid glucose
- 2 tsps apricot jam
Recipe
- Remove from cake tin and allow to cool.
- Melt the cream and chocolate together and then add glycerine.
- Allow the chocolate mixture to cool a little while applying apricot jam to the top of the cake.
- Pour the chocolate icing over the top of the cake.
- Allow to set for 2-3 hours (Optional: Drive to Liverpool to get a new passport).
- Enjoy!
Apparently the cake improves after 2-3 days so I baked two and will be testing the other one tonight at Network :) Thanks again to my cake baking assistant!
