In which I bake a tasty lattice...
This week without any idea of what to make I asked a friend for a suggestion and I got the word 'lattice'. So here is a traditional Polish recipe for a spicy apple lattice.
Ingredients*
Sweet Dough
- 600 g self raising flour
- 45 g caster sugar
- 1 tbsp quick action yeast
- 1 tsp salt
- 175 ml milk
- 120 ml water
- 75 g butter
- 2 eggs
Apple Filling
- 75 g butter
- 75 g brown sugar
- 2 tbsps self raising flour
- 1 ¼ tsp cinnamon
- ½ tsp nutmeg
- ¼ tsp allspice
- 500 g apples
Icing
- 250 g icing sugar
- 2 tsps orange extract
- ¼ tsp vanilla extract
- water to mix
*This recipe will make 2 loaves.
How-to
- Mix 200 g flour, sugar, yeast and salt in a mixing bowl.
- Heat the butter, milk and water in a pan until combined and warm to the touch.
- Slowly add the heated milk to the flour mixture while mixing at a medium speed using an electric whisk.
- Beat for 2 minutes.
- Add eggs and 75 g flour.
- Beat for 2 minutes on high speed.
- Use a spoon to stir in the rest of the flour until you have a stiff dough.
- Grease the top and cover with clingfilm.
- Refrigerate for at least 2 hours (you can keep the dough for up to 3 days).
- Knead the dough down.
- Divide the dough into two and roll each into 12" x 9" rectangles.
- Put the dough on a baking sheet and spread with butter.
- Cut 1" strips ⅓ of the way in from each side of the dough.
- Mix the brown sugar, flour, spices and thinly sliced apple in bowl.
- Spread filling down the centre of the rectangle.
- Fold the strips in at an angle on alternating sides.
- Seal the ends.
- Allow the bread to rise until doubled over about an hour.
- Bake at 180°C until golden brown (30-40 minutes).
- Mix icing ingredients together and drizzle over the loaves.
